Use Lamb Shanks 300-350 + 350-400 grams weight ranged (TPL Items 76-136 & 76-138)
Foreshanks can be trimmed to weight range pre packing and cooking.
Do NOT use Shanks UNDER 300 grams in this specification
Each shank is seasoned with a light coating of Herby Lamb Seasoning (item code 643001) in Thermformer pouch.
Cook and Cool as per TPLZ13 time temp requirments.
Cool Shanks, pack 7 x 700gram (2 shanks) packs into a TFL-5kg carton to catch weight.
Ideally use one 300-350 gram shank with a 350-400 gram Shank.
